Cooking for One

When I worked in the food industry I would eat at least one decent meal a day while I was at work, so I could justify eating junk at other times during the day. Now that I don't have the luxury of free food at my disposal I've been trying to eat healthier at all times.

It is definitely a challenge to plan and prepare for one person. I try to buy things that I can freeze and have on hand, but then I lose the benefits of fresh fruits and veggies. However, I've found some great alternatives.

Chobani Yogurt. My favorite flavors are Raspberry, Strawberry, Peach, Lemon, Mango...okay basically I haven't had a bad flavor yet!
Green Giant Valley Fresh Steamers Healthy Colors. I like the lightly sauced sides, but these are much better for you...and of course more appealing to the eyes.
Of course fresh vegetables are much better for you, but I hate to waste them if I don't eat them fast enough.


In other exciting news this Saturday the Franklin Junior Woman's Club is hosting the No Excuse for Child Abuse Walk and Day in the Park. These two events are family friendly and for two great causes; promoting awareness of child abuse and encouraging the love of literature in a fun activity based manner. 
I am so happy to be part of such a great group of women. It is a great feeling giving back to my community, I also love that since joining I actually feel like part of this community not just a transplant.

I think when Nick returns from his deployment he will be thoroughly shocked by how many people I know now. On the subject of deployment, number four is currently underway and nearly completed. Just a "few" more weeks. I can definitely see the light at the end of the tunnel.

I am off to cook a salmon fillet and a Healthy Color steamer. :)
